Cucumbers are an antioxidant, which help protect against pollutants and protect against cancer & heart disease. They are also an anti-inflammatory when used in skincare! In addition, cucumbers provide an excellent source of Vitamin C. Vitamin C helps to strengthen the immune system and fights infections. It also produces collagen, keeps bones, skin and joints firm and strong, helps make anti-stress hormones, & turns food into energy!
Tomatoes are full of antioxidants, that help keep the skin cells youthful and rejuvenated, and fight off free radicals – which cause damage & premature aging to skin cells. Tomatoes are the perfect way to get antioxidants because they’re so versatile! Throw them in a salad, on a sandwich, or dip them in hummus for a healthy snack!
Recipe for Dilly Cucumber Bites:
- 4 Cucumbers
- 1 – 8oz package cream cheese (can substitute for fat free)
- 1 – 5.3oz container of plain Greek yogurt (can substitute light mayo)
- 3 Tbsp fresh dill, minced (or 1 Tbsp dried)
- 1 Tbsp Ranch seasoning mix
- Grape tomatoes, halved or quartered
Mix the cream cheese, Greek yogurt, dill, and Ranch seasoning mix with an electric mixer or by hand. Slice cucumbers into ½” thick pieces. Put cream cheese mixture in a piping bag (or simply do with a Ziploc bag by cutting a small hole in bottom corner) and pipe the mixture onto the cucumber slices. Top with a grape tomato piece. ENJOY!
